I did it friends…. I let go of grains…. Im already gluten free, and I rarely eat sugar, but certain grains DO NOT do well with my system. But lets be real friends, I love a good cookie, brownie, sweet of my choice with a nice cup of coffee every morning… yes friends, EVERY morning….. And, I can’t give that up. Ill just rebound if I do…..BUT I don’t play around when I set a goal so I WILL NOT eat grains…. thus the predicament…. How to make a healthy grain free chocolate cookie…. I decided that I was GOING to do it… let the baking begin……And friends, I created one really really good recipe… Now this is a health food so don’t expect Mrs Fields, but do expect to have all the taste of a true CCC without the grains, gluten, processed sugar or high fat….. Can you see where Im going with this… Just trust me, friends, I don’t play around with sweets…. Ive got you covered…… AND SHHHHHHH don’t tell Trav the secret ingredient…. He does not eat green veggies…. He’s like a child…. He has NO idea what are in these cookies… he just loves them!!! The secret ingredient…One little trick I always try to do is cut down the fat…. High fat just makes me feel well….oily…. I don’t love how I feel when I eat super high fatty foods, even good fats so I stay away from them….. I learned a LONG LONG time ago that I do not fit into any diet mold…. I can’t eat South Beach, Keto, Carb Cycle, Plant Based, etc… you name it and Ive tried it… WITHOUT success I might add…. What I have learned is that I NEED to listen to my body…. What makes me feel good, what makes me feel sluggish…. And THIS has been the BEST diet ever…. NO DIET… just a lifestyle….. so I always cut down the fat…. Shredded zucchini works perfectly… you can’t even tell it is there…. If you drain the water… make sure to squeeze the water out of the zucchini and it will replace half the oil in your recipe…. I shredded it super fine and then use a dish towel to squeeze out all the water…it works like a champ….. Don’t try to use all coconut sugar… the cassava flour needs the gooeyness of the maple syrup to make that perfect chewy cookie…. Recipe: 4 Tbs Butter or Ghee 1/4 Cup Maple Syrup 1/3 Cup Coconut Sugar 1 Egg 1 Tsp Vanilla 2 cups Shredded Zucchini (make sure to squeeze out the water. This will make is about a 1/2 cup of zucchini when all the water is drained) 1 Cup Cassava Flour 1Tsp Baking Powder 1 Tsp Baking Soda Dash of Salt 1/4 Cup Dark Choc Chips Combine butter, coconut sugar, maple syrup and vanilla. Beat in a mixer until smooth. Add egg. Combine dry ingredients and mix until smooth. Fold in chocolate chips. Put dough in the fridge for 15 minutes. This is key to a good grain free cookie. Remove from fridge and scoop dough 2 inches apart on baking sheet. Bake at 350 for 12 minutes…. LET COOL completely. Cassava flour is super super soft so DO NOT touch them until they are completely cool- at least an hour…. Store in fridge and enjoy!!!! Try this recipe…. It is a leave on treatment of squalene and Japanese peach that restores lips…. so truly it has dual purpose.... if Im just lounging around, Ill add this to my lips to give them a little bit of color... just slightly... it hydrates and locks in moisture that plumps ups the lips for a smooth look. Tatcha Kissu Lip Mask The neutral look is going to continue to remain a classic color for spring beauty. A nude is not always created equal.... depending on my outfit I branch into pinky and peachy nudes... I wanted to show you some similar pinky neutrals and peachy neutrals that are my GO TOs.... and a little trick for how I apply them.... Over-line SLIGHTLY..... Apply Lipstick... and blend....
